Slow-cooked pork with cherries, jalapeno, honey, and Mexican spices for a sweet and spicy flavor explosion.
Ingredients:
  • 1 lime, juiced
  • 1 onion, chopped
  • 1 large green bell pepper, chopped
  • 1 bunch green onions, chopped
  • 1 jalapeno pepper, chopped
  • 4 large cloves garlic, minced
  • 2.5 pounds boneless country-style pork ribs, cut into 3/4-inch pieces
  • 1.5 cups fresh sweet cherries, pitted and cut into quarters
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.25 teaspoon onion powder
  • 3 tablespoons honey
Instructions:
  • In a large saucepan with a lid over medium heat, heat the olive oil and sauté the onion, green bell pepper, green onions, jalapeno pepper, and garlic until softened, around 10 minutes.
  • Combine pork, cherries, cilantro, lime juice, chili powder, cumin, and onion powder in the pot. Stir well and bring to a boil. Cover, simmer for 30 minutes until pork is cooked through and veggies and cherries release their juices.
  • Uncover, add honey, season with salt and pepper, then simmer until sauce thickens and pork is tender, approximately 30 minutes. Sauce will have a slightly thin consistency.
