Try zesty lemon-garlic zoodles as a versatile side dish for any meal.
Ingredients:
  • 2 medium zucchini
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 0.25 teaspoon lemon-pepper seasoning
  • 0.25 teaspoon red pepper flakes
  • 1 pinch salt to taste
  • 1 teaspoon chopped fresh parsley
  • 0.5 teaspoon lemon zest
Instructions:
  • Slice the zucchini into thick or thin ribbons using a spiralizer, based on your preference.
  • In a generous skillet, melt butter over a gentle heat. Add a splash of olive oil and minced garlic, cook until garlic is aromatic, which should take around 1 minute. Introduce zucchini and mix well to soak up all the flavorful butter-garlic sauce. Saute until zucchini noodles are just softened to your liking, about 3 to 5 minutes.
  • Mix in fresh lemon juice, zesty lemon-pepper, a pinch of red pepper flakes, and a touch of salt, then take the pot off the heat. Top it off with a sprinkle of fresh parsley and lemon zest before serving.
