Lemon-garlic butter shrimp zoodles. Ready in 30 minutes for a quick, satisfying meal.
Ingredients:
  • 4 to 5 medium zucchini
  • 1/2 to 1 teaspoon salt
  • 3 tablespoons butter
  • 2 cloves garlic, finely minced
  • 1 pound shrimp, peeled and deveined (I used 26/30 count shrimp)
  • 1/4 teaspoon black pepper
  • Zest from 1 lemon
  • 1 to 1 1/2 teaspoons fresh-squeezed lemon juice
  • Fresh chopped parsley, to garnish
Instructions:
  • For the zucchini, use a vegetable peeler or mandolin to slice each zucchini lengthwise into long, thin ribbons, stopping at the core. Lay the ribbons on paper towels in a single layer, sprinkle with salt, and let them sweat for about 10 minutes. Enjoy the core as a tasty snack!
  • In a large skillet over medium heat, melt the butter until it turns nutty, smells fragrant, and develops small brown solids at the bottom. Quickly transfer the browned butter to a heat-proof container, scraping in all the flavorful bits with a spatula. Stir in the minced garlic and set aside.
  • Prepare the shrimp: Dab the cleaned shrimp with a paper towel to absorb any extra moisture, then coat them in a generous pinch of salt and 1/4 teaspoon pepper in a large bowl.
  • Prepare the skillet: Using a clean paper towel, wipe the skillet used for melting the butter. Place it back on the stove over medium-high heat. Once the skillet is hot but not smoking, add a thin coat of oil to the base. Cook the shrimp in batches for around 2 minutes per side until they are pink, opaque, and slightly relaxed. Transfer the cooked shrimp to a plate.
  • Saute the zucchini noodles in a hot skillet with a touch of oil until they soften slightly but remain al dente, about 3 minutes. Pat dry to remove excess moisture and take off the heat.
  • Combine lemon zest and juice with brown butter and garlic. Add shrimp and zucchini back into the pan. Pour lemon-garlic butter over the top and toss to mix. Transfer to a serving platter or individual plates. Garnish with fresh parsley and serve.
