Spicy shrimp soup with zucchini noodles and diced tomatoes, ready in no time to warm you up.
Ingredients:
  • 1 zucchini
  • 2 (14.5 ounce) cans petite diced tomatoes
  • 1 (14.5 ounce) can low-sodium chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon crushed red pepper flakes
  • 0.5 teaspoon dried Mexican oregano
  • 0.25 teaspoon ground black pepper
  • 1 pound uncooked medium shrimp, peeled and deveined
Instructions:
  • Cut the zucchini in half and create a 1/4-inch deep cut along both sides. Use a spiralizer to transform the zucchini into small noodles.
  • In a large saucepan over medium-high heat, mix together tomatoes, broth, chili powder, red pepper flakes, oregano, and black pepper. Simmer the soup for 15 minutes after it comes to a boil.
  • Add succulent shrimp and your preferred quantity of zucchini to the pot. Allow it to simmer until the shrimp turns a beautiful shade of pink, which should take about 3 to 5 minutes. Serve by ladling into soup bowls.
