Swedish meatballs by Chef John: seasoned beef and pork balls baked, served in savory gravy.
Ingredients:
  • 0.5 yellow onion, finely chopped
  • 1.5 teaspoons fine salt
  • 2 large eggs
  • 0.33333334326744 cup plain bread crumbs
  • 0.75 teaspoon freshly ground black pepper
  • 0.25 teaspoon ground allspice
  • 1 pinch cayenne pepper, or to taste
  • 1 pound ground beef chuck
  • 1 pound ground pork
  • 3 tablespoons all-purpose flour
  • 3.25 cups beef broth
  • 0.5 cup heavy cream
  • 0.5 teaspoon white sugar
  • 0.25 teaspoon Worcestershire sauce
  • salt and freshly ground black pepper to taste

Instructions:
  • In a large skillet over medium heat, melt butter until sizzling. Sauté onion with a sprinkle of salt until soft and translucent, about 6 minutes.
  • Combine the onion mixture with eggs, bread crumbs, milk, black pepper, nutmeg, allspice, and cayenne in a large bowl. Add ground beef and pork, mix thoroughly. Cover with plastic wrap and chill in the refrigerator for 1 hour.
  • In a large skillet over medium heat, melt butter. Whisk in flour and cook until golden brown, about 4 to 5 minutes. Gradually whisk in beef broth. Increase heat to medium-high, whisk in cream, and bring to a simmer. Add sugar and Worcestershire sauce. Simmer until slightly thickened, approximately 6 to 7 minutes. Season with salt and black pepper, then remove from heat and set aside.
  • Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil and give it a light spray of cooking oil.
  • Shape 2 to 3 tablespoons of meatball mixture into balls using moistened hands, and place on the baking sheet. Repeat with the rest of the mixture.
  • Bake in the preheated oven for about 20 minutes until beautifully browned and fully cooked. Ensure an instant-read thermometer inserted into the center reaches at least 160 degrees F (70 degrees C).
  • Add the meatballs to the flavorful gravy and gently heat over medium-low flame for approximately 5 minutes until they are heated through and deliciously coated.
