Maple-glazed sweet potato casserole topped with crunchy pistachios and brown sugar, a delicious holiday side dish.
Ingredients:
  • 2.5 pounds sweet potatoes, peeled and cubed
  • salt
  • 2 large eggs
  • 0.25 cup maple syrup
  • 0.25 cup buttermilk
  • 0.33333334326744 cup milk
  • 0.5 teaspoon vanilla extract
  • 1 pinch ground allspice
  • 1 pinch cayenne pepper
  • 0.5 cup chopped roasted, salted pistachios
  • 0.5 cup light brown sugar
  • 0.33333334326744 cup all-purpose flour
  • 0.25 cup butter, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 2 1/2-quart baking dish with butter.
  • In a large pot, simmer sweet potato cubes with water and a large pinch of salt until tender when pierced with a knife, approximately 10 minutes. Drain thoroughly and mash in 2 tablespoons of butter.
  • In a large bowl, combine eggs, maple syrup, buttermilk, milk, vanilla extract, cayenne pepper, allspice, and 1/2 teaspoon salt. Whisk until smooth. Gradually blend in the mashed sweet potatoes, starting with 2 tablespoons, until well mixed. Transfer the sweet potato mixture to the baking dish.
  • Combine pistachios, brown sugar, flour, and 1/4 cup melted butter until fully incorporated. Sprinkle the crumble evenly on top of the sweet potatoes and gently press it down with a fork.
  • Bake until the topping is golden brown and the casserole is fully cooked, for 25 to 30 minutes. For an extra touch, broil for 5 minutes to enhance the browning on the topping. Allow it to cool for about 10 minutes before serving.
