Chef John's sweet potato buns: Light, tender, and slightly sweet. Perfect for burgers, turkey sandwiches, or just buttered.
Ingredients:
  • 0.5 pound sweet potatoes, peeled and cubed
  • 0.5 cup all-purpose flour
  • 0.5 cup warm water
  • 1 (.25 ounce) package dry active yeast (such as Fleischmann's® RapidRise Yeast)
  • 3 tablespoons melted butter
  • 2 teaspoons honey
  • 1.25 teaspoons fine sea salt
  • 3.25 cups all-purpose flour, or more as needed
  • 1 teaspoon water
  • 1 tablespoon sesame seeds, or to taste
Instructions:
  • In a large pot, cook sweet potatoes in salted water until very tender, about 15 to 20 minutes. Drain and mash with a potato masher. Set aside 1 cup to cool to room temperature. Refrigerate the rest for later.
  • Combine 1/2 cup flour, 1/2 cup warm water, and yeast in a bowl, whisk together. Cover and let it sit in a warm spot for about 15 minutes to activate the yeast.
  • Take 1 cup of cooled mashed sweet potatoes and add them to the yeast mixture in the stand mixer bowl. Include egg, melted butter, honey, sea salt, and about 3 cups of flour. Mix using the dough hook until combined. Knead for 2 to 3 minutes. If the dough is sticky, gradually add more flour until it pulls away from the sides of the bowl. Continue kneading for about 2 more minutes until the dough is soft, slightly sticky, and elastic.
  • Place dough on a floured surface, shape into a smooth ball, then return it to the bowl. Drizzle with oil and rub it all over to keep the dough moist. Cover and let it rise in a warm spot until doubled in size, approximately 2 hours.
  • Transfer the dough onto a lightly floured surface and gently deflate any air pockets. Use minimal flour to prevent sticking. Shape the dough into a 3/4-inch thick rectangle, then divide it into 16 equal pieces. Roll each piece into a ball, flatten slightly, and arrange them on a baking sheet lined with a silicone mat. Allow the dough to rise until doubled in size, for about 45 minutes.
  • Preheat the oven to a toasty 400°F (200°C).
  • Combine 1 egg with 1 teaspoon water, then brush each bun with the mixture and sprinkle with sesame seeds.
  • Bake in the oven until golden brown, approximately 15 minutes.
