Ultimate comfort casserole with homemade white Cheddar sauce, tuna, peas, and crunchy breadcrumbs.
Ingredients:
  • 3 tablespoons unsalted butter
  • 0.5 cup finely diced yellow onion
  • 1.5 teaspoons kosher salt, divided
  • 3 tablespoons all-purpose flour
  • 4 cups cold milk
  • 1 cup shredded white Cheddar cheese
  • 1 (12 ounce) package dry egg noodles
  • 2 (5.5 ounce) cans tuna packed in olive oil, drained and crumbled, or to taste
  • 0.75 cup frozen peas, thawed and drained
  • 1 pinch cayenne pepper
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon Worcestershire sauce
  • 0.5 cup plain bread crumbs
  • 0.5 cup grated Parmigiano-Reggiano cheese
  • 2 tablespoons olive oil
Instructions:
  • Begin by warming up your oven to a toasty 375 degrees F (190 degrees C) and gently coat a 9x13-inch casserole dish with a touch of butter.
  • In a medium saucepan over medium heat, melt 3 tablespoons of butter. Cook the onion with 1/2 teaspoon of kosher salt until softened and translucent, about 3 to 4 minutes. Stir in the flour and cook for another 3 minutes, adjusting the heat as necessary.
  • Whisk cold milk for 1 minute, then cook over medium-high heat until the sauce thickens and simmers. Remove from heat and whisk in Cheddar cheese. Set aside for later use.
  • 1. Bring a large pot of water to a vigorous boil with the remaining salt. Add the egg noodles and cook for 5 minutes. Drain thoroughly and transfer to a large mixing bowl. Combine with the reserved sauce, tuna, peas, cayenne, black pepper, and Worcestershire sauce, mixing gently until well blended.
  • Transfer the mixture into the dish. Combine bread crumbs, Parmigiano-Reggiano cheese, and olive oil in a bowl until it looks like wet sand. Sprinkle over the casserole evenly.
  • Place in the middle of the oven and bake until golden and bubbly, approximately 30 minutes. Rest for 10 minutes before slicing and serving.
