Try Chef John's secret specialty tuna melt recipe - a delicious open-faced sandwich combining tuna and cheese.
Ingredients:
  • 1 (6.5 ounce) jar oil-packed tuna, drained
  • 2 tablespoons finely diced celery
  • 1 tablespoon minced green onion
  • 2 teaspoons capers, drained
  • 2 tablespoons mayonnaise, or more to taste
  • 1 teaspoon Asian chile paste (such as sambal oelek)
  • 0.33333334326744 cup fresh mozzarella cheese
  • 2 tablespoons softened butter, divided
  • 2 thick slices French bread
  • 0.25 cup shredded sharp white Cheddar cheese, divided
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • In a mixing bowl, gently flake tuna with a fork. Mix in celery, green onion, capers, mayonnaise, and chile paste. Add small pieces of mozzarella and combine well. Season with salt and black pepper, then chill until ready to serve.
  • Preheat the broiler in the oven and cover a baking sheet with aluminum foil.
  • Generously coat both sides of the French bread slices with butter.
  • Broil buttered bread until both sides are golden brown and toasted, about 2 to 3 minutes per side. Once done, flip the bread slices so the darker sides are on the bottom.
  • Spread the flavorful tuna salad generously on the bread slices using two forks. Ensure to cover the entire surface and edges of the bread. Sprinkle shredded Cheddar on top of each sandwich and finish with a touch of fiery cayenne pepper for a burst of flavor.
  • Broil sandwiches until the cheese is melted and bubbly, for about 5 to 6 minutes.
