Watermelon salad with mint, olives, and feta - a refreshing summer surprise!
Ingredients:
  • 1 large seedless watermelon
  • 1.5 cups crumbled feta cheese
  • 0.5 cup sliced green olives
  • 0.5 cup sliced Kalamata olives
  • 0.5 cup thinly sliced fresh mint leaves
  • 1 pinch freshly ground black pepper to taste
  • 2 tablespoons rice vinegar
  • 2 tablespoons olive oil
Instructions:
  • Cut the watermelon in half lengthwise, then cut into quarters. Slice uniformly thick pieces from the center of each quarter and arrange on plates or trays.
  • Excavate the soft, white seeds and create shallow divots on the surface with the tip of a spoon to cradle the toppings.
  • Sprinkle feta cheese, olives, and mint over the slices, season with freshly ground black pepper, then drizzle with rice vinegar and olive oil. Serve right away or refrigerate until ready to enjoy.
