Savory greens with smoky bacon and onion - a delicious side dish!
Ingredients:
  • 0.25 cup olive oil
  • 8 slices bacon, cut into 1/2-inch pieces
  • 1 large onion, cut into 1/2-inch pieces
  • 6 cloves garlic, minced
  • 1 pound fresh collard greens, cut into 2-inch pieces
  • 0.5 pound turnip greens, cut into 2-inch pieces
  • 0.5 pound mustard greens, cut into 2-inch pieces
  • 5 cups chicken broth
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 pinches red pepper flakes
Instructions:
  • In a large pot over medium-high heat, sauté bacon in olive oil until crisp, about 7 to 10 minutes. Remove bacon, crumble it, and return to the pot. Add onion and cook until tender, about 5 minutes. Stir in garlic until fragrant, about 2 minutes. Add collard greens, turnip greens, and mustard greens; cook until they start to wilt, about 2 to 3 minutes.
  • Gently flavor the pot with chicken broth and add a pinch of salt, black pepper, and red pepper flakes. Cover, simmer on low heat, and cook until greens are tender, about 45 minutes.
