Cherry, Chocolate, and Pistachio Zuccotto

Indulge in Italian flair with a no-bake cherry, chocolate, and pistachio panettone 'zuccotto'.
Ingredients:
  • 1 (1 pound) loaf panettone
  • 1 (16 ounce) container ricotta cheese
  • 1 (8.8 ounce) container mascarpone cheese
  • 0.33333334326744 cup chopped pistachio nuts
  • 0.33333334326744 cup mixed candied fruit
  • 0.25 cup white sugar
  • 1 (2 ounce) bar dark chocolate, coarsely chopped
  • 0.5 (15 ounce) can cherries, syrup reserved
  • 1 cup vin santo (Italian dessert wine), or as needed
  • 3 (1 ounce) squares dark chocolate, broken into pieces
Instructions:
  • Create a mold by lining a large bowl with plastic wrap.
  • Trim off the top and bottom of the panettone by 1/2 inch each. Then, cut off another horizontal slice from the top. Proceed by slicing the panettone vertically and then cutting each vertical slice in half.
  • Combine ricotta cheese, mascarpone cheese, pistachio nuts, candied fruit, sugar, and dark chocolate until smooth. Gently fold in cherries to create a marbled effect.
  • Start by placing the top panettone slice at the bottom of the mold and drizzling it with vin santo. Arrange the vertical halves along the sides of the bowl, slightly overlapping them if necessary. Sprinkle with more vin santo. Spread half of the ricotta mixture in the center, using the back of a spoon to smooth it into the corners. Place the second panettone slice on top and sprinkle with more vin santo. Add the rest of the ricotta mixture, smoothing it down with a spoon. Cover with the bottom slice and drizzle more vin santo and reserved cherry syrup on top.
  • Cover the dish with plastic wrap and top with a plate. Place bags of beans on top to press down on the zuccotto. Let it chill in the refrigerator until firm, at least 8 hours or overnight.
  • Melt chocolate in the microwave-safe bowl in 15-second intervals, stirring between each, for 1 to 3 minutes until smooth.
  • Flip the zuccotto onto a serving plate, remove the plastic wrap, and generously drizzle melted chocolate on top.
