Indulge in Italian spumoni-inspired cupcakes with layers of white cake, pistachio pudding, cherry juice, and chocolate frosting.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 3/4 of box (4-serving size) pistachio instant pudding and pie filling mix
  • 1/4 cup cherry juice (from jar of maraschino cherries)
  • 1 container (12 oz) Betty Crocker™ Whipped chocolate frosting
  • 18 whole maraschino cherries with stems
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pans) and line 18 regular-size muffin cups with paper baking cups.
  • Prepare the cake mix according to the package instructions and divide the batter evenly into two bowls. In one bowl, stir in 3/4 of the box of pudding mix until well combined. In the other bowl, mix in the cherry juice thoroughly.
  • Spoon pistachio batter evenly into muffin cups, then top with cherry batter, distributing it evenly over the pistachio layer.
  • Follow baking instructions on the cupcake mix box and allow the cupcakes to cool thoroughly.
  • Spread a generous layer of frosting over the cupcakes and finish by garnishing each with a juicy cherry on top.
