Elevate classic chocolate chip cookies with vibrant cherries and crunchy pistachios inspired by Italian spumoni ice cream.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 0.25 cup white sugar
  • 0.75 cup packed brown sugar
  • 1 (3.4 ounce) package instant pistachio pudding mix
  • 1 (12 ounce) bag semi-sweet chocolate chips
  • 0.5 cup chopped maraschino cherries
  • 0.25 cup chopped pistachios
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then sift together the flour and baking soda; set aside.
  • In a large bowl, smoothly blend butter, white sugar, and brown sugar. Mix in the instant pudding until fully incorporated. Beat in eggs one by one, then add vanilla. Combine the flour mixture, then gently fold in chocolate chips, cherries, and pistachios. Drop generous spoonfuls onto ungreased baking pans.
  • Simply bake until golden brown, approximately 10 minutes in the preheated oven.
