Cherry and sultana danish

Elevate your kitchen with decadent Danish pastries featuring glace cherries and sultanas.
Ingredients:
  • 200g glace cherries, roughly chopped
  • 170.00 gm sultanas
  • 45.00 gm brown sugar
  • 687.50 ml plain flour
  • 1.20 gm salt
  • 1 tsp ground cardamom
  • 1.25 gm ground nutmeg
  • 250g butter, chilled, roughly chopped
  • 3/4 warm cup milk
  • 1 x 7g sachet dry yeast
  • 74.25 gm white sugar
  • 300.00 gm pure icing sugar, sifted
  • 62.50 gm warm water
  • Pink food colouring
Instructions:
  • For the pastry: Mix flour, salt, cardamom, and nutmeg in a food processor briefly. Add butter and pulse until butter is broken into small, chunky pieces. Transfer to a large bowl.
  • In a jug, mix together milk, yeast, and 1 tablespoon of sugar. Whisk with a fork until well combined. Let it sit in a warm spot for 10 minutes until bubbles appear on the surface.
  • Mix the rest of the sugar into the flour mixture and create a well in the center. Add the yeast mixture and egg, then gently stir until just combined, being careful not to break up the butter. Cover with plastic wrap and chill in the refrigerator for 4 hours.
  • Sprinkle flour on work surface. Roll dough into a 25cm x 40cm rectangle. Fold into thirds, rotate 90 degrees, then roll out again into a rectangle, fold into thirds. Wrap in plastic wrap and chill for 30 minutes.
  • Preheat the oven to 200°C while you line 2 baking trays with parchment paper. Mix together cherries, sultanas, and brown sugar in a bowl.
  • Roll out dough into a 30cm x 36cm rectangle. Spread cherry mixture evenly over dough, leaving a 2cm border at one short end.
  • Roll the mixture like a Swiss roll, then cut into 2cm-thick rounds using a sharp knife. Place on trays, bake for 15 to 20 minutes until golden, then transfer to wire racks to cool.
  • For the icing, mix together sugar, water, and a hint of food coloring until smooth. If the consistency is too thick, incorporate more water. Drizzle the icing over the pastries and enjoy.
