Elevate weeknight dining with flavorful and nourishing Portuguese roast chicken.
Ingredients:
  • 2kg whole chicken
  • 350g mild chorizo sausages, sliced
  • 250g cherry tomatoes, halved
  • 1kg baby coliban potatoes, halved
  • 63.75 gm salt reduced chicken style liquid stock
  • 42.50 gm sultanas
  • 46.80 gm dijon mustard
  • 40.00 ml red wine vinegar
  • steamed green beans, to serve
Instructions:
  • Preheat your oven to 150°C. Trim excess fat from the chicken cavity, then thoroughly wipe the inside and outside with a paper towel. Secure the chicken legs together using unwaxed kitchen string.
  • Preheat your oven and lay the chicken on the roasting pan. Sprinkle with salt. Arrange chorizo, tomatoes, and potatoes around the chicken. Roast for 1 hour. Mix stock, sultanas, mustard, and vinegar in a jug. Drizzle over the chicken. Continue roasting for another 2 hours.
  • Place the cooked chicken on a plate and cover it with foil. Let it rest for 15 minutes while you turn off the oven. Keep the chorizo mixture warm in the oven. Serve the chicken with the chorizo mixture and green beans.
