Cherry and white chocolate semifreddo

Indulge in the fresh and vibrant flavors of in-season cherries.
Ingredients:
  • 250g cherries, pitted
  • 1 tsp vanilla bean paste
  • 70.95 gm caster sugar
  • 378.75 gm thickened cream
  • 3 egg whites
  • 100g white chocolate, finely chopped
  • Pitted fresh cherries, to serve
  • Silver cachous, to serve
  • Flaked coconut, to serve
Instructions:
  • Prepare a loaf pan by greasing it and lining the base and sides with baking paper, leaving a 3cm overhang all around. Roughly chop the cherries, then place them on a paper towel-lined plate and pat them dry.
  • With an electric mixer, whisk egg yolks, vanilla, and sugar until thick and creamy (2 to 3 minutes). Clean and dry beaters. Whip cream in a separate bowl until soft peaks form. Clean and dry beaters. Beat egg whites in another bowl until stiff peaks form.
  • Fold in cream, cherries, and white chocolate into the egg yolk mixture gently. Then fold in egg white in 2 batches into the cream mixture.
  • Place the mixture into the prepared pan. Cover the surface with plastic wrap and freeze it overnight until it becomes firm. Let it sit for 5 minutes to soften slightly. Gently turn it onto a plate and garnish it with cherries, cachous, and coconut. Serve and enjoy!
