Cherry-topped dessert with a light, low-fat cracker-walnut crust, made airy with whipped egg whites.
Ingredients:
  • 6 egg whites
  • 2 cups white sugar
  • 0.75 teaspoon cream of tartar
  • 2 cups crushed saltine crackers
  • 1 cup chopped walnuts
  • 2 teaspoons vanilla extract
  • 2 (21 ounce) cans cherry pie filling
  • 1 (16 ounce) package frozen whipped topping, thawed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13 inch pan.
  • Whisk egg whites until they form stiff peaks. Slowly incorporate the sugar and cream of tartar, continuing to beat until the sugar completely dissolves.
  • Combine the crackers, nuts, and vanilla before pouring the mixture into the prepared pan. Bake in the preheated oven for 25 minutes.
  • Once the baked dish is out of the oven, allow it to cool and cut it into squares. Serve each portion with a dollop of pie filling and whipped topping on top.
