Delight with a dazzling Christmas ham glazed with seasonal cherries for an effortless centerpiece.
Ingredients:
  • 160g cherry jam
  • 170g marmalade
  • 110g brown sugar
  • 60ml maple syrup
  • 60ml brandy
  • 46.80 gm wholegrain mustard
  • 46.80 gm Dijon mustard
  • 1/2 tsp fennel seeds
  • 1.25 gm mixed spice
  • 8.5kg Full Leg Ham (bone in)
  • 40.00 ml whole cloves
Instructions:
  • Preheat oven to 180°C. In a saucepan over medium-high heat, mix jam, marmalade, sugar, maple syrup, and brandy or orange juice. Bring to a boil and cook for 5 mins until slightly thickened. Strain through a sieve, discard solids, and add mustards, fennel seeds, and mixed spice. Let cool slightly.
  • Place the ham on a clean work surface. Use a small sharp knife to cut through the rind 8cm from the shank. Gently separate the rind from the fat using your thumb. Peel back the rind, using your fingers to remove it completely.
  • Score the fat with a small sharp knife diagonally at 3cm intervals to create a diamond pattern, being careful not to cut too deeply. Place 1 whole clove in the center of each diamond.
  • Lay the ham on a wire rack in a roasting pan and generously brush it with a quarter of the jam mixture. Wrap the shank in foil and bake for 1 1/4 hours, basting with the remaining jam mixture every 15 minutes, until the ham caramelizes and turns golden brown. Allow it to cool slightly for 15 minutes before serving.
  • Arrange the ham on a spacious platter and slice for serving.
