Spiced cherry pickle: a tangy companion for glazed ham.
Ingredients:
  • 215g (1 cup) caster sugar
  • 250ml (1 cup) water
  • 250ml (1 cup) apple cider vinegar
  • 4 dried bay leaves
  • 1 1/2 tsp mustard seeds
  • 1 1/2 tsp fennel seeds
  • 2 tsp black peppercorns
  • 1 tsp whole allspice
  • 1kg fresh cherries, stems removed
Instructions:
  • Combine sugar, water, vinegar, bay leaves, mustard seeds, fennel seeds, peppercorns, and allspice in a large saucepan over low heat until sugar dissolves. Increase heat and bring to a boil, then simmer for 5 minutes.
  • Gently simmer cherries with syrup, then cool slightly. Spoon cherries into five sterilized 250ml (1 cup) jars using a slotted spoon. Top with syrup and seal tightly before refrigerating.
