Indulge in decadence with this rich double chocolate cherry cheesecake on a crave-worthy Oreo crust.
Ingredients:
  • 125g oreo
  • 40g butter, melted
  • 225g Melts Real White Chocolate
  • 500g Cream Cheese, softened
  • 165g caster sugar
  • 60ml gelatine powder
  • 250ml thickened cream
  • 125g canned cherries
  • 150g Melts Real Dark Chocolate, melted
  • Cherries, extra, to serve
Instructions:
  • Mix butter with biscuit crumbs until well combined. Press the mixture firmly into a greased 20cm springform pan. Refrigerate until it sets.
  • Microwave white chocolate according to package instructions until melted.
  • In a bowl, use an electric mixer to blend cream cheese and sugar until smooth. Mix in gelatine mixture and half of the white chocolate. Fold in whipped cream. Gently add pitted cherries. Pour mixture over prepared base and chill for 2 hours until set.
  • Spread the leftover white chocolate on a piece of baking paper to create a 20cm x 10cm rectangle. Let it cool until firm, then break into long shards.
  • Transfer the cheesecake to a beautiful serving plate. Drizzle the melted dark chocolate over the top, ensuring it spreads to the edges with a slight overflow. Let it sit until the chocolate sets. Garnish with additional cherries and white chocolate shards. Serve right away.
