Heavenly meringue cloud with cream cheese blend and colorful sweet-tart fruit filling.
Ingredients:
  • 6 egg whites
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 3/4 cups sugar
  • 2 packages (3 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 cups whipping cream
  • 2 cups miniature marshmallows
  • 1 can (21 oz) cherry pie filling
  • 1 teaspoon lemon juice
  • 2 cups sliced strawberries or 1 package (16 oz) frozen strawberries, thawed, drained
Instructions:
  • Preheat oven to 275°F. Grease a 13x9-inch pan. In a large bowl, whip egg whites, cream of tartar, and salt with an electric mixer until foamy. Gradually add 1 3/4 cups sugar, beating until mixture forms stiff, glossy peaks. Spread evenly in the pan.
  • Bake for 1 hour. After turning off the oven, let the meringue rest in the closed oven for 12 hours.
  • Combine cream cheese, 1 cup sugar, and vanilla in a large bowl until smooth. In a chilled medium bowl, whip the cream until stiff peaks form. Gently fold in the whipped cream and marshmallows into the cream cheese mixture. Spread the mixture evenly over the meringue base and refrigerate for at least 12 hours, but no longer than 24 hours.
  • Combine all topping ingredients in a medium bowl until thoroughly mixed. Drizzle over individual dessert servings and refrigerate for storage.
