Chewy Oatmeal Cherry Toffee Crisps

Irresistible cookies packed with berries, oatmeal, chocolate, and toffee. Soft and chewy or crisp and crunchy - your choice!
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 0.75 cup brown sugar
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
  • 1.5 cups rolled oats
  • 1 cup dried cherries
  • 1 cup miniature semisweet chocolate chips
  • 1 cup toffee baking bits
Instructions:
  • Combine the flour and baking soda, then set aside. Cream together the butter, brown sugar, and white sugar in a large bowl until smooth. Add the egg and vanilla and mix well. Slowly incorporate the sifted mixture, followed by the oats, cherries, chocolate chips, and toffee bits until evenly mixed. Divide the dough into 3 portions and shape into 2-inch diameter logs. Wrap in waxed paper and chill in the refrigerator or freezer until firm.
  • Preheat the oven to 350 degrees F (175 degrees C) while preparing your cookie sheets. Slice the dough logs into 3/4 inch thick slices and place the cookies 2 inches apart on the prepared sheets. Enjoy the aroma as they bake to perfection!
  • Bake in the preheated oven for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
