Coconut Streusel Cherry Pie

Cherries in liqueur topped with coconut streusel - a decadent twist on cherry pie.
Ingredients:
  • 0.25 cup white sugar
  • 0.25 cup cornstarch
  • 6 cups pitted Bing cherries
  • 3 tablespoons almond-flavored liqueur (such as Disaronno®)
  • 1 (9 inch) baked pie crust
  • 1.5 cups all-purpose flour
  • 0.5 cup butter
  • 0.75 cup flaked coconut
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly heated cooking environment.
  • In a saucepan, combine 1/4 cup of sugar and cornstarch. Mix in cherries and almond-flavored liqueur. Cook over low heat, stirring, until thickened for 10 to 15 minutes. Transfer the filling into a pie crust.
  • In a bowl, combine the flour and 3/4 cup of sugar. Add in the butter and mix until it resembles coarse crumbs, then stir in the coconut. Sprinkle the topping over the filling, leaving a 2-inch border in the center.
  • Bake in the oven until the coconut is golden and the topping is nicely browned, about 15-20 minutes.
