Thanksgiving must-have: Buttery sweet potatoes with coconut and pecan streusel topping.
Ingredients:
  • 2 large sweet potatoes, peeled and chopped
  • 0.5 cup milk
  • 0.33333334326744 cup butter, cubed
  • 1 cup chopped pecans
  • 1 cup sweetened flaked coconut
  • 0.75 cup lightly packed brown sugar
  • 0.5 cup all-purpose flour
  • 0.33333334326744 cup butter, melted
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously coat a 9x11-inch casserole dish with cooking spray.
  • In a large pot, cook sweet potatoes in water until tender. Drain and measure out 3 cups; return to pot. Save the rest for later.
  • Combine white sugar, milk, eggs, cubed butter, and vanilla extract with sweet potatoes using an electric mixer until silky smooth. Transfer mixture to the prepared dish.
  • Mix together pecans, coconut, brown sugar, flour, and melted butter until evenly combined and crumbly. Sprinkle the mixture evenly over the sweet potato dish.
  • Bake until the topping is golden brown, for about 20 to 30 minutes in the preheated oven.
