Granola Streusel-Topped Sweet Potatoes

Enhance sweet potato casserole with crispy granola bars topping.
Ingredients:
  • 6 medium dark-orange sweet potatoes, peeled, cut into 1 1/2-inch pieces (7 to 8 cups)
  • 1/2 cup whipping cream
  • 2 tablespoons butter or margarine
  • 1/4 cup real maple syrup or maple-flavored syrup
  • 1/2 teaspoon salt
  • 4 Nature Valley™ maple-brown sugar crunchy granola bars (2 pouches from 8.9-oz box), crushed
  • 2 tablespoons butter or margarine, melted
Instructions:
  • In a 4-quart saucepan or Dutch oven, add potato pieces and cover with water. Bring to a boil, then simmer over medium-low heat for 15 to 20 minutes until tender. Drain and return to the pan.
  • Preheat your oven to 350°F. Grease an 8-inch square (2-quart) glass baking dish with cooking spray. Mix potatoes with whipping cream, 2 tablespoons of butter, maple syrup, and salt. Mash until smooth using a potato masher or electric mixer. Transfer the mixture into the baking dish.
  • Combine crushed granola bars and melted butter in a small bowl, then sprinkle the mixture over the potatoes.
  • Bake without a cover for 25-30 minutes until heated through and the topping is crispy.
