Homemade honey-sweetened granola with coconut flakes for a satisfying breakfast crunch.
Ingredients:
  • 3 cups old-fashioned rolled oats (such as Bob's Red Mill® Gluten-Free Oats)
  • 0.5 cup unsweetened coconut flakes
  • 0.25 cup honey
  • 1 tablespoon coconut oil, melted
  • 0.75 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 325°F (165°C) for the perfect baking temperature.
  • Evenly distribute oats and coconut flakes on a baking sheet.
  • Bake in the preheated oven for 8 minutes. Stir oats and coconut, then rotate the baking sheet. Bake for another 8 minutes or until oats and coconut are toasted.
  • Combine honey, coconut oil, vanilla extract, and cinnamon in a bowl and whisk until smooth. Stir in the oat mixture until well coated.
  • Prepare the baking sheet with a silicone liner or parchment paper. Evenly spread the oat mixture on the baking sheet.
  • Bake granola in the oven until golden and toasted, about 8 to 15 minutes. Stir and then transfer granola to a wire rack to cool completely.
