Delicious hasselback apples with granola streusel and sweet raisins, ideal for breakfast or dessert.
Ingredients:
  • 6 tablespoons all-purpose flour
  • 1 tablespoon brown sugar
  • 0.125 teaspoon ground nutmeg
  • 6 tablespoons cold unsalted butter, divided
  • 1 cup granola cereal
  • 2 Fuji apples - peeled, cored, and halved lengthwise
  • 2 tablespoons raisins, or more to taste
  • 2 tablespoons apple juice
  • 2 teaspoons white sugar
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and grease an 8x8-inch baking dish with butter.
  • Mix together the flour, brown sugar, and nutmeg in a large bowl until well combined.
  • Dice 4 tablespoons of butter into small cubes. Incorporate the butter into the flour mixture using a fork or pastry blender until it resembles coarse cornmeal. Mix in granola and toss until a clumpy streusel forms.
  • Lay down 2 skewers or butter knives that are at least 1/2-inch thick on a cutting board. Insert an apple half, cut-side down, between the skewers or knife handles.
  • Cut thin slices into the apple half, being cautious not to cut all the way through. Carefully fan out the slices, placing 2 raisins between each. Repeat with the other apple halves.
  • Arrange the raisin-stuffed apple halves cut-side down in the buttered baking dish. Drizzle apple juice and white sugar over the top, then generously top with the granola streusel. Finish by scattering the remaining butter on top of the apples.
  • Bake until apples are tender, streusel is golden brown and crispy, for about 55 minutes. Let it cool briefly before serving.
