Sliced sweet potato casserole with brown sugar, apple cider vinegar, and herby notes. Topped with buttery breadcrumbs, parsley, and thyme for a perfect balance of flavors. Ideal for holidays or any occasion.
Ingredients:
  • 3 tablespoons butter, melted
  • 3 tablespoons packed brown sugar
  • 2 teaspoons apple cider vinegar
  • 1/4 cup finely chopped shallot
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 lb orange-fleshed sweet potatoes, peeled and cut crosswise into 1/8-inch slices (about 6 medium)
  • 1/3 cup Progresso™ plain panko crispy bread crumbs
  • 1 tablespoon butter, melted
  • 1 teaspoon chopped fresh thyme leaves
  • 1 tablespoon chopped fresh Italian (flat-leaf) parsley leaves
Instructions:
  • Preheat the oven to 375°F. Combine 3 tablespoons of melted butter with brown sugar, vinegar, shallot, salt, and pepper in a large bowl. Add potato slices to the butter mixture and toss until all slices are evenly coated.
  • Take a handful of potatoes slices and stack them neatly on top of each other. Place the potato stack on its side in an ungreased 8-inch square (2-quart) baking dish. Repeat this process with the remaining potato slices, creating rows of tightly packed stacked slices. Use any leftover butter mixture in the bowl to spread over the potatoes.
  • Bake for 1 hour. Combine bread crumbs, 1 tablespoon melted butter, and thyme in a small bowl. Sprinkle the casserole with the bread crumb mixture. Bake for 12 to 17 minutes until the potatoes are fork-tender and the bread crumb mixture is golden brown. Garnish with parsley and allow it to stand for 10 minutes before serving.
