Honey hasselback potatoes recipe

Upgrade your roast potatoes with a sweet, buttery glaze in hasselback style. A crispy, sticky coating forms as they cook, perfect with a sprinkle of salt for balance. Irresistible!
Ingredients:
  • 12 (about 170g each) sebago potatoes, peeled
  • Olive oil spray
  • 40g butter
  • 60ml (1/4 cup) honey
Instructions:
  • Preheat your oven to 200C (180C fan-forced) and line a large baking tray with parchment paper.
  • Slice a small piece off the length of the potato so it can rest evenly on the cutting board. Place bamboo skewers on each side of the potato. With a sharp knife, make thin cuts on the top of the potato, about 3-5mm apart, making sure not to slice all the way through (the skewers will assist in avoiding this). Repeat with the rest of the potatoes.
  • Spread out the potatoes on the baking tray and generously coat with oil. Bake for 40 minutes until crispy. In a small saucepan, combine butter and honey until melted. Brush 1/3 of the honey mixture over the baked potatoes. Return to the oven and bake for another 40 minutes, brushing every so often until beautifully golden and caramelized.
  • Transfer the golden-brown potatoes to a warmed serving dish, generously brush them with any leftover honey mixture, sprinkle a pinch of salt over the top, and serve immediately.
