Smoked mezcal margarita

Enhance your cocktails with smoked limes, honey, and mezcal for a bold and flavorful drink. Carefully smoke ingredients to avoid overpowering flavors.
Ingredients:
  • 1 tsp lime juice (smoked if you like, from 1 lime; see method)
  • 15 ml (1tbsp) honey (smoked if you like; see method)
  • 1 tbsp Tajin seasoning
  • 1 fine slice of red chilli
  • 60 ml (2fl oz) mezcal
Instructions:
  • Place the whisky glass in the freezer to chill while you smoke the limes and honey. Light lumpwood charcoal on the BBQ, add smoking wood like cherry, and smoke the halved lime and honey for 20 minutes. Spread Tajin on a plate. Wet the chilled glass rim with a smoked lime half, dip in Tajin, and fill with ice and a slice of chili. Shake mezcal, lime juice, and honey with ice in a shaker, then strain and pour into the prepared glass.
