Ingredients:
  • 12 medium pontiac potatoes, peeled, halved
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 40.00 ml finely chopped fresh oregano leaves
  • 62.50 ml dried breadcrumbs
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Place potatoes cut-side down on a board and make small vertical cuts with a sharp knife, ensuring not to slice all the way through. Transfer the prepared potatoes to a large roasting pan.
  • Drizzle oil into pan, then sprinkle parsley, oregano, and breadcrumbs. Season generously with salt and pepper. Toss everything together to create a flavorful mixture. Roast potatoes for 1 hour, or until they turn a beautiful golden brown and become tender.
