Hasselback potatoes with bay leaves

Update classic potatoes with a modern touch of bay leaf.
Ingredients:
  • 12 small red-skinned potatoes (preferably pontiac)
  • About 24 fresh bay leaves*
  • 15g unsalted butter
  • 1-2 garlic cloves, crushed
Instructions:
  • Heat your oven to 180°C.
  • Skewer each potato at the base and make slits down to the skewer without cutting through. Insert a bay leaf into each slit.
  • In a large frypan over medium-high heat, combine oil and butter. Sauté garlic for 1 minute, then add potatoes. Cook for 2-3 minutes until they start to brown. Transfer potatoes to a baking tray and roast for 30-40 minutes until crispy and golden. Sprinkle with sea salt before serving.
