Hasselback potatoes with thyme & garlic

Festive seasoned potatoes – a perfect side dish for any celebration!
Ingredients:
  • Sea salt flakes
  • 2.5kg medium Desiree potatoes, peeled, halved crossways (see note)
  • Fresh thyme sprigs
  • 40g butter, melted
  • 60ml (1/4 cup) olive oil
  • 1 large garlic bulb, broken into cloves, unpeeled
Instructions:
  • Boil the potato in a large saucepan until just cooked, for about 20 minutes. Let it cool after draining.
  • Make 3 crosswise slits in each potato, about one-quarter to one-third deep. Insert a sprig of thyme into each slit.
  • Preheat the oven to 200ºC. In a bowl, mix the butter and oil together. Place the potatoes cut-side down in a single layer in a large or two small baking dishes. Arrange the garlic around the potatoes. Pour the butter mixture over them. Roast in the oven for 30 minutes, brushing occasionally, until golden. Finish by sprinkling with sea salt flakes before serving.
