Streusel Topped Apple Cheesecake Bars

Transform traditional apple crumble cake into irresistible apple cheesecake bars with a crunchy granola streusel topping.
Ingredients:
  • 9 graham cracker rectangles
  • 2 tablespoons granulated sugar
  • 1 teaspoon grated lemon peel
  • 1/4 cup unsalted butter, melted
  • 2 eggs
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup lemon juice
  • 1/2 cup packed light brown sugar
  • 1 1/2 cups chopped apples
  • 1 teaspoon lemon juice
  • 3/4 cup packed light brown sugar
  • 1/2 cup Gold Medal™ all-purpose flour
  • 6 tablespoons cold unsalted butter
  • 2/3 cup Cascadian Farm® organic French vanilla almond granola
Instructions:
  • Preheat the oven to 325°F and lightly coat an 8- or 9-inch square pan with butter or cooking spray.
  • Combine graham crackers, sugar, and lemon peel in a food processor until fine crumbs form. Pour in melted butter and process until evenly moistened. Press mixture into pan and bake until lightly browned, then cool for 10-15 minutes.
  • Afterward, quickly clean the food processor bowl with paper towels to eliminate any crumbs. Then combine cream cheese, eggs, cinnamon, nutmeg, 1/4 cup lemon juice, and 1/2 cup brown sugar in the bowl. Cover and blend until the mixture is smooth and creamy. Finally, pour the filling over the partially baked crust.
  • In a small bowl, gently mix apples with 1 teaspoon of fresh lemon juice before sprinkling over the filling.
  • In a medium bowl, combine 3/4 cup brown sugar, flour, and cold butter using a fork or your fingers until a crumbly mixture forms. Add granola to the mixture. Sprinkle the mixture over the apples and filling.
  • Bake for 35 to 40 minutes until topping is golden brown and center is nearly set (it should have a slight jiggle). Allow to cool on a rack for 1 hour, then refrigerate for at least 1 hour until chilled. Cut into 3 rows by 3 rows before serving.
