Apple Cinnamon Streusel Cheesecake

Indulge in a decadent apple pie cheesecake topped with crunchy oats for a delightful twist on a classic dessert.
Ingredients:
  • 1 cup old-fashioned oats
  • 1/4 cup packed brown sugar
  • 1/3 cup butter or margarine, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 can (21 oz) apple pie filling
Instructions:
  • Preheat the oven to 325°F. Combine oats, flour, brown sugar, and butter in a small bowl until crumbly. Set aside 1/2 cup for the topping. Press the rest of the oat mixture onto the bottom of a 9-inch ungreased springform pan.
  • In a large bowl, using an electric mixer on medium speed, cream together the smooth cream cheese, milk, eggs, cinnamon, and vanilla until well blended. Pour the mixture onto the crust in the pan.
  • Bake until the center is set, about 55 to 65 minutes. Let it cool on a rack for roughly 30 minutes.
  • In an 8-inch nonstick skillet, toast 1/2 cup reserved oat mixture over medium-low heat for 2 to 3 minutes until lightly toasted. Spread apple pie filling over the partially cooled cheesecake, then sprinkle the toasted oats on top. Let it cool for 1 1/2 hours, then refrigerate for 4 hours or overnight. To serve, run a metal spatula along the side of the cheesecake to loosen it, remove the side of the pan, and store in the refrigerator.
