Apple Cheesecake Snack Bars

Delicious snack bars with apple cheesecake filling and cinnamon-walnut streusel topping. Irresistible!
Ingredients:
  • 1 teaspoon butter, or as needed
  • 1.5 cups graham cracker crumbs, or more as needed
  • 0.33333334326744 cup butter, melted
  • 2 (8 ounce) packages cream cheese, at room temperature
  • 2 large eggs
  • 3 Granny Smith apples - peeled, cored, and diced
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
  • 0.5 cup brown sugar
  • 0.5 cup all-purpose flour
  • 1 tablespoon finely chopped walnuts, or to taste
  • 0.25 teaspoon ground cinnamon
  • 0.25 cup butter, cut into small pieces
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) while you butter up a 9x13-inch baking pan.
  • Combine graham cracker crumbs and melted butter in a bowl until it forms a crumbly mixture. Adjust by adding more crumbs if needed. Press the crust into the prepared baking pan.
  • Bake in the preheated oven for 7 to 8 minutes until beautifully golden and perfectly set. Remove and set aside.
  • In a large bowl, use an electric mixer to blend cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract on low speed until fully blended. Pour the filling over the warm crust.
  • In a separate bowl, combine apples, 2 tablespoons sugar, cinnamon, nutmeg, and allspice, then spread evenly over the filling.
  • Combine brown sugar, flour, walnuts, and cinnamon in a bowl for the streusel. Incorporate butter into the mixture using your fingers or a knife until crumbly. Sprinkle over the apple layer.
  • Bake until the cheese filling is firm, for about 30 to 35 minutes in the preheated oven.
  • Once finished baking, allow the dish to cool for about 30 minutes. Cut it into small squares and chill in the refrigerator until ready to enjoy.
