Bake apple crisp muffins with whole wheat and kamut flours, topped with streusel for a sweet twist.
Ingredients:
  • 2.5 cups quick-cooking oats
  • 1 cup whole wheat flour
  • 1 cup kamut flour
  • 0.33333334326744 cup packed brown sugar
  • 2 tablespoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.75 teaspoon ground nutmeg
  • 0.75 teaspoon ground cardamom
  • 4 apples, peeled and diced
  • 2 cups buttermilk
  • 0.5 cup canola oil
  • 2 large eggs
  • 0.33333334326744 cup honey
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prep your 12 muffin cups with a little grease or some cute paper liners.
  • Combine oats, whole wheat flour, kamut flour, brown sugar, baking powder, cinnamon, nutmeg, and cardamom in a bowl. Mix in apples until coated.
  • In a separate bowl, whisk together buttermilk, canola oil, eggs, and honey until smooth.
  • Create a crater in the oat mixture and pour the buttermilk mixture into it. Stir until the batter is barely damp. Allow oats to soften for around 5 minutes. Fill muffin cups generously with the batter.
  • Bake in the oven until muffins are golden brown and spring back when lightly touched, about 20-25 minutes.
