Cherry ice cream: luscious blend of fresh cherries, milk, cream, sugar, and bittersweet chocolate shards.
Ingredients:
  • 1 1/2 cups pitted ripe sweet cherries (from about 3/4 lb cherries)
  • 3/4 cup milk
  • 1 3/4 cups cream
  • 1/2 cup sugar
  • 1 pinch salt
  • 1 teaspoon lemon juice
  • 2 tablespoons Amaretto, cherry liqueur, or rum (optional)
  • 4 ounces bittersweet chocolate, chopped fine, keep in freezer until used
Instructions:
  • In a medium saucepan, combine cherries, milk, 1 cup of cream, sugar, and salt. Heat over medium heat until steamy, then simmer gently for 15 minutes. Remove from heat and carefully blend until smooth, using a blender or immersion blender (be cautious with hot liquid).
  • Pour the mixture into a large bowl and gently mix in the remaining 3/4 cup of cream. Refrigerate until thoroughly cold for a few hours. For a quicker chill, you can place the bowl over an ice bath.
  • Add the lemon juice and Amaretto to the mixture before transferring it to the ice cream maker. Optional: omit the alcohol, but using it will enhance the texture and flavor of the ice cream.
  • Churn in ice cream maker: Follow the manufacturer's instructions and churn the ice cream using your ice cream maker.
  • Gently combine chocolate chips: After churning the ice cream until soft, mix in finely chopped chocolate. Transfer to an airtight container and freeze for at least an hour, ideally longer.
