Festive dessert with Christmas colors and summer flavors.
Ingredients:
  • 107.50 gm caster sugar
  • 8.80 gm vanilla extract
  • 1 cinnamon stick
  • 300g cherries, pitted, halved
  • 300ml double cream
  • 4 meringue nests, roughly crushed
  • small fresh mint leaves, to serve
Instructions:
  • In a saucepan over low heat, mix together sugar and 1/2 cup warm water until sugar dissolves. Increase heat to medium and simmer without stirring until mixture thickens, about 5 minutes. Stir in vanilla, cinnamon, and cherries. Increase heat to medium-high and simmer for 1 more minute. Remove from heat, discard cinnamon, and let cool completely.
  • In a bowl, gently fold together the cream and meringue. Divide the cream mixture evenly into four glasses. Layer half of the cherry mixture on top. Repeat with the remaining cream mixture and cherry mixture. Enjoy!
