Make indulgent choc-hazelnut meringue for a heavenly dessert.
Ingredients:
  • 100.00 gm hazelnut meal
  • 10.00 gm cornflour
  • 268.75 gm caster sugar
  • 6 egg whites
  • 378.75 gm thickened cream, whipped
  • 600g fresh cherries, pitted, halved
  • 70.95 gm caster sugar
  • 62.50 ml brandy
  • 7.50 gm cornflour
  • 100g dark cooking chocolate, chopped
  • 40.00 ml chocolate hazelnut spread
  • 63.13 gm thickened cream
Instructions:
  • 1. Preheat the oven to 150°C/130°C fan-forced and line 3 baking trays with baking paper, then mark a 19cm circle on each sheet of paper. 2. In a bowl, combine hazelnut meal, cornflour, and 1/4 cup of caster sugar, then set aside. 3. Using an electric mixer, beat the egg whites until stiff peaks form. Gradually add the remaining caster sugar, 1 tablespoon at a time, ensuring to beat well after each addition. Beat for 4 minutes or until the sugar has dissolved.
  • Carefully combine half of the hazelnut mixture into the meringue using a spatula. Then gently fold in the remaining hazelnut mixture. Spread one-third of the batter inside 1 circle. Repeat with the remaining batter. Bake for 30 to 35 minutes, rotating trays after 20 minutes, until light golden and firm to the touch. Turn off the oven and let the cake cool with the door slightly open.
  • While the cherry jam is cooking, combine cherries, sugar, and brandy in a small saucepan over medium heat. Stir and cook until the sugar dissolves, then bring to a simmer. Let simmer for 6 minutes or until cherries are softened. In a small bowl, mix cornflour with 2 teaspoons of cold water, then stir it into the cherry mixture. Let it simmer for 1 to 2 minutes until thickened. Allow the jam to cool completely.
  • Prepare the Choc-hazelnut ganache by combining chocolate, hazelnut spread, and cream in a heatproof, microwave-safe bowl. Microwave on medium (50%) for 1 to 2 minutes, pausing to stir every 30 seconds with a metal spoon until melted and smooth. Allow it to sit for 10 minutes to slightly thicken.
  • Begin by elegantly placing one delicate meringue disc on a beautiful cake stand. Gracefully layer it with half of the velvety whipped cream and sumptuous cherry jam. Gently assemble with another meringue disc, adding the remaining cream and jam layers. Complete the creation with the final meringue disc, then generously spread with a decadent ganache. Allow it to rest for 10 minutes to reach perfection. Present and savor this exquisite dessert.
