Festive cherry and pistachio bark for Christmas delight.
Ingredients:
  • 1 1/4 cups dried cherries
  • 2 bags (12 oz each) white vanilla baking chips (4 cups)
  • 12 oz vanilla-flavored candy coating (almond bark), chopped
  • 1 1/4 cups chopped red or green pistachio nuts
Instructions:
  • Prepare the pan by lining a 15x10-inch pan with waxed paper, making sure the sides are covered. In a small microwave-safe bowl, microwave cherries and water uncovered on High for 2 minutes, then drain.
  • In a 2-quart heavy saucepan, gently melt baking chips and candy coating on low heat, stirring often. Once melted, take off heat and mix in cherries and nuts. Spread the mixture in the pan.
  • Chill for 1 hour until firm. Use a 3-inch tree-shaped cookie cutter or your preferred shape to cut the cookies. Store covered at room temperature.
