Indulge in a decadent twist on Cadbury Cherry Ripe with sweet fruit, chewy coconut, and rich dark chocolate.
Ingredients:
  • 60g butter
  • 52g Cherry Ripe, finely chopped
  • 250g Baking Dark Chocolate, finely chopped
  • 1 egg, lightly whisked
  • 55g (1/4 cup) caster sugar
  • 45g (1/4 cup, lightly packed) brown sugar
  • 75g (1/2 cup) plain flour
  • 100g glace cherries
  • 125ml (1/2 cup) condensed milk
  • 65g (3/4 cup) desiccated coconut
  • 4-6 drops of red food colouring (optional)
Instructions:
  • Preheat the oven to 160C. Lightly spray a 22 x 7.5cm bar pan with oil, then line the base and two long sides with baking paper, leaving paper to overhang the sides.
  • Stir the butter, Cherry Ripe, and 120g dark chocolate in a saucepan over medium heat using a metal spoon until the chocolate has melted. Allow it to cool slightly before using.
  • Whisk together the egg and sugar with the chocolate mixture, then add flour and stir until smooth. Pour the batter into the prepared pan and bake for 25-30 minutes until a skewer inserted in the center comes out with crumbs clinging to it. Allow to cool slightly before serving.
  • Chop half of the cherries finely and cut the remaining cherries in half. Mix the cherries, condensed milk, and coconut in a bowl, then add the food coloring. Spread the cherry mixture over the brownie, smoothing the surface. Bake for 20-25 minutes until lightly golden. Let it cool completely, then remove from the pan.
  • Melt the rest of the chocolate in a microwave-safe bowl on medium heat, stirring every 30 seconds, for 2 minutes. Keep 2 tablespoons of melted chocolate aside. Pour the melted chocolate over the bar, spreading it on top and around the edges. Drizzle the reserved chocolate lengthwise to make lines. Let the chocolate set. Cut into slices.
