Festive three layer Christmas cake with spiced layers, creamy frosting, and wreath design using red and green cherries.
Ingredients:
  • 1.5 cups canned cherry pie filling
  • 0.5 cup butter, softened
  • 2 cups white sugar
  • 2 eggs
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup butter, softened
  • 3 tablespoons milk
  • 1 tablespoon vanilla extract
  • 8 cups sifted confectioners' sugar
Instructions:
  • Preheat the oven to 350°F (175°C) while you prepare the cake pans by greasing and flouring them. Use a food processor to roughly chop the cherry pie filling to the desired consistency.
  • In a large bowl, beat butter and white sugar until creamy. Add eggs one at a time, mixing well after each. In another bowl, sift together flour, baking soda, nutmeg, cinnamon, cloves, and allspice. Gradually mix in dry ingredients and cherry pie filling, stirring until just combined. Divide batter evenly between three pans.
  • Bake in the preheated oven for 30 to 35 minutes until a toothpick inserted in the center comes out clean. Cool the cakes in the pans on a wire rack, then gently tap them out and cool completely on the wire rack.
  • Prepare the frosting by mixing cream cheese, 1 cup butter, milk, and vanilla in a large bowl. Use an electric mixer to blend until smooth. Slowly add the sugar and mix until the frosting is creamy. Spread between cake layers and all over the cake.
