Cherry tomato, cucumber and green bean salad

Vibrant and colorful salad to enhance any meal.
Ingredients:
  • 150g cherry tomatoes, halved
  • 1 Lebanese cucumber, sliced
  • 90g baby green beans, trimmed
  • 56.88 gm olive oil
  • 21.00 gm lemon juice
  • 20.00 ml finely chopped dill
  • 1 avocado, peeled, stone removed, sliced
  • salt and pepper
Instructions:
  • Combine the tomato and cucumber in a large bowl.
  • Blanch beans in boiling water for 2-3 minutes until vibrant and crisp. Transfer to ice water to cool, then drain and set aside.
  • Make a flavorful dressing by whisking together olive oil, lemon juice, and dill.
  • Combine beans and avocado with the tomato mixture, season with salt and cracked black pepper, drizzle with dressing, gently toss to mix, transfer to a serving bowl, and enjoy!
