Purslane, Cherry Tomato, and Cucumber Salad

Foraged purslane salad with cherry tomatoes and cucumber.
Ingredients:
  • 1 pint cherry tomatoes, halved
  • 3 small Persian cucumbers, thinly sliced
  • salt to taste
  • 1 bunch purslane
  • 2 tablespoons extra virgin olive oil
Instructions:
  • Mix cherry tomatoes and cucumbers in a salad bowl. Add a generous sprinkle of salt, stir thoroughly, and set aside while you prepare the purslane.
  • Thoroughly wash purslane, gently dry with a kitchen towel, remove large leaves and tender stems, keeping only the top part, and transfer to a bowl. Discard tough stems.
  • Inspect the tomato-cucumber mixture; the tomatoes should have released their juices due to the salt. If not, stir thoroughly and allow it to rest for an additional 5 minutes.
  • Combine the purslane with the tomatoes and cucumbers in a salad bowl. Drizzle some olive oil over the salad and toss thoroughly. Serve promptly for the best taste.
