Cherry-choc sundaes

Indulge in a delightful cherry-chocolate sundae for a refreshing and delicious treat.
Ingredients:
  • 1 litre chocolate ice-cream
  • 2 x 52g Cherry Ripe chocolate bars, finely chopped
  • 1/2 x 300g packet frozen pitted cherries, halved
  • 8.80 gm flaked coconut, toasted (see tip)
Instructions:
  • 1. Place the ice-cream in a large bowl and let it sit for 10 minutes until just softened. Gently fold in the Cherry Ripe candy. Transfer the mixture to a 7cm-deep, 14cm x 20cm airtight container, smoothing the surface. Cover with plastic wrap and freeze overnight until it is firm.
  • In a saucepan over medium heat, combine sugar and 1/2 cup of warm water. Stir for 2 to 3 minutes until the sugar dissolves without boiling. Bring the mixture to a gentle boil, then reduce the heat to low. Simmer for 8 to 10 minutes until slightly thickened. Add cherries and simmer for an additional 2 minutes until they begin to soften. Allow the mixture to cool for 20 minutes before using.
  • Scoop 2 hearty portions of the ice-cream mixture into each dish, generously drizzle with 2 tablespoons of cherry sauce, sprinkle with coconut, and serve.
