Bake fruit-filled surprise cupcakes with flavors like blueberry, lemon, strawberry, or raspberry fillings for a delectable twist.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Vanilla Cake Mix
  • 1 can (21 oz) cherry pie filling
  • 1 cup shortening
  • 6 cups powdered sugar
  • 3 tablespoons milk
  • 24 maraschino cherries, well drained
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • Prepare the cake batter according to the box instructions for 24 cupcakes. Fill each muffin cup with 3 tablespoons of batter and add 2 teaspoons of pie filling onto the center of each. Bake and cool as directed for 24 cupcakes.
  • In a large bowl, whip together shortening, powdered sugar, and milk until creamy using an electric mixer. Transfer the frosting to a piping bag fitted with your preferred decorating tip. Pipe the frosting onto the cupcakes in a spiral pattern from the outer edge, building up to a peak in the center, and finish each with a cherry on top.
