Cherry-filled muffins with streusel topping – a delicious twist on classic cobbler.
Ingredients:
  • 2 cups all-purpose baking mix
  • 0.25 cup white sugar
  • 1 egg
  • 0.66666668653488 cup milk
  • 1 (21 ounce) can cherry pie filling, divided
  • 0.25 cup all-purpose flour
  • 0.25 cup packed brown sugar
  • 2 tablespoons melted butter
  • 0.25 tablespoon ground cinnamon
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin pan with paper baking cups.
  • Combine the baking mix, white sugar, egg, and milk in a bowl until just mixed. Gently fold in half of the cherry pie filling. Fill muffin cups 2/3 full and garnish each with 3 cherries from the remaining filling.
  • Combine flour, brown sugar, melted butter, and cinnamon in a small bowl, using a fork to create a crumbly mixture. Sprinkle evenly over the unbaked muffins.
  • Bake in the preheated oven for around 22 minutes or until a toothpick comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
