Warm up winter with make-ahead delicious dessert.
Ingredients:
  • 2 x 300g packets frozen pitted cherries
  • 107.50 gm caster sugar
  • 21.00 gm lemon juice
  • 20.00 gm cornflour
  • 240.00 gm Premium vanilla bean custard
  • 112.50 gm self-raising flour
  • 2.50 gm ground cinnamon
  • 60g butter, chilled, chopped
  • 1 egg yolk
  • 65.00 gm buttermilk
Instructions:
  • Preheat your oven to 180°C (160°C for fan-forced).
  • In a medium saucepan over medium heat, mix cherries, sugar, and lemon juice. Cook for 3 to 4 minutes until cherries defrost and sugar dissolves. In a small bowl, combine cornflour and 1 tablespoon cold water, then stir into cherry mixture. Cook for 2 to 3 minutes until mixture boils and thickens. Transfer cherry mixture to a 1 litre-capacity ovenproof dish placed on a baking tray.
  • Prepare topping: Combine flour, sugar, and cinnamon in a bowl, sifting them together. Use your fingertips to blend the butter into the mixture until it resembles breadcrumbs. Create a well in the center and add the egg yolk and buttermilk. Stir with a butter knife until a soft, sticky dough forms. Drop spoonfuls of the dough over the warm cherry mixture. Bake for 30-35 minutes until golden. Sprinkle with icing sugar before serving with custard.
